Balsamic Glazed Chicken with Roasted Vegetables

  • 4 boneless, skinless chicken breasts
  • 1/4 cup balsamic vinegar
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 4 cups chopped vegetables (such as broccoli, bell peppers, and onions)
  • 2 tbsp olive oil
