Borscht Recipe
Borscht Recipe – Made with tender beets, savory beef, and an array of vegetables simmered to perfection in a savory broth
Ingredients:
- 2 large beets, peeled and grated
- 1 onion, finely chopped
- 2 carrots, peeled and grated
- 2 potatoes, peeled and diced
- 2 cloves garlic, minced
- 1 lb beef stew meat, cubed
- 6 cups beef broth
- 2 tablespoons tomato paste
- 2 bay leaves
- 1 tablespoon vinegar
- Salt and pepper to taste
- Sour cream and fresh dill, for garnish
Instructions:
- In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
- Add the cubed beef stew meat to the pot and cook until browned on all sides.
- Stir in the grated beets, carrots, and diced potatoes, and cook for another 5 minutes.
- Pour in the beef broth and add the tomato paste, bay leaves, vinegar, salt, and pepper.
- Bring the soup to a boil, then reduce the heat and let it simmer for about 1 hour, or until the vegetables are tender and the flavors have melded together.
- Taste and adjust the seasoning if needed.
- Serve the Russian Borscht hot, garnished with a dollop of sour cream and a sprinkle of fresh dill.
