Borscht Recipe – Made with tender beets, savory beef, and an array of vegetables simmered to perfection in a savory broth


  • 2 large beets, peeled and grated
  • 1 onion, finely chopped
  • 2 carrots, peeled and grated
  • 2 potatoes, peeled and diced
  • 2 cloves garlic, minced
  • 1 lb beef stew meat, cubed
  • 6 cups beef broth
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1 tablespoon vinegar
  • Salt and pepper to taste
  • Sour cream and fresh dill, for garnish


  1. In a large pot, heat some oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant.
  2. Add the cubed beef stew meat to the pot and cook until browned on all sides.
  3. Stir in the grated beets, carrots, and diced potatoes, and cook for another 5 minutes.
  4. Pour in the beef broth and add the tomato paste, bay leaves, vinegar, salt, and pepper.
  5. Bring the soup to a boil, then reduce the heat and let it simmer for about 1 hour, or until the vegetables are tender and the flavors have melded together.
  6. Taste and adjust the seasoning if needed.
  7. Serve the Russian Borscht hot, garnished with a dollop of sour cream and a sprinkle of fresh dill.
