Cheesy Chicken and Rice Recipe

Ingredients:

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 can diced tomatoes, drained
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh parsley
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper, to taste

Instructions:

  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat.
  2. Add the chicken pieces and season with garlic powder, salt, and pepper. Cook for 5-7 minutes, or until browned on all sides.
