Chicken and Rice Recipe for Busy Weeknights

  • 4 chicken thighs
  • 1 cup uncooked white rice
  • 1 ¾ cups chicken broth
  • 1 onion, diced

  • 2 teaspoons paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • Chopped parsley, for garnish (optional)


  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Season the chicken thighs with paprika, salt, and black pepper.
  3. Add the chicken to the skillet and cook for 5 minutes on each side, or until golden brown.
  4. Remove the chicken from the skillet and set aside.

  10. Cover the skillet and reduce heat to low. Cook for 20-25 minutes, or until the rice is tender and the chicken is cooked through.
