Classic Chinese Fried Rice Recipe

Fried rice is a staple dish in Chinese cuisine that’s both delicious and easy to make. This classic recipe features fluffy rice, scrambled eggs, and a mix of vegetables and protein that are stir-fried together with soy sauce and sesame oil. It’s a satisfying and flavorful meal that’s perfect for any occasion.


  • 3 cups cooked white rice, cooled
  • 3 tbsp vegetable oil
  • 2 eggs, lightly beaten
  • 1/2 cup diced carrots
  • 1/2 cup diced onion
  • 1/2 cup frozen peas
  • 1/2 cup diced cooked ham or shrimp
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • Salt and pepper to taste


  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the beaten eggs to the skillet and stir-fry until cooked through.
  3. Add the diced carrots and onion to the skillet and stir-fry for 2-3 minutes until they’re tender.
  4. Add the frozen peas and diced ham or shrimp to the skillet and stir-fry for another 2-3 minutes.
  5. Add the cooked white rice to the skillet and stir-fry everything together for 3-4 minutes, breaking up any clumps of rice with a wooden spoon.
  6. Add the soy sauce and sesame oil to the skillet and stir-fry everything together for another minute.
  7. Season with salt and pepper to taste.
  8. Serve hot.
