Egg Curry Recipe

This flavorful and comforting dish features hard-boiled eggs simmered in a fragrant tomato-based sauce infused with spices like cumin, coriander, turmeric, and garam masala. Ingredients:
- 6 hard-boiled eggs
- 2 tbsp oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1-inch piece of ginger, grated
- 1 green chili, chopped
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric
- 1/2 tsp garam masala
- 1 cup tomato puree
- 1/2 cup water
- Salt, to taste
- Cilantro, chopped for garnish
Instructions:
- Heat the oil in a large skillet over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
- Add the onion, garlic, ginger, and green chili to the skillet and sauté for 3-4 minutes, or until the onion is translucent.
- Add the coriander powder, turmeric, and garam masala to the skillet and cook for another minute, stirring constantly.
- Add the tomato puree and water to the skillet and bring the mixture to a boil. Reduce the heat to low and simmer for 10-15 minutes, stirring occasionally, until the sauce has thickened.
- Cut the hard-boiled eggs in half and add them to the skillet. Gently stir to coat the eggs in the sauce. Simmer for 5-10 minutes or until the eggs are heated through.
- Season with salt to taste and garnish with cilantro. Serve with rice, naan, or bread.
