Egg Curry Recipe

Warm up your taste buds with this delicious Egg Curry recipe. This flavorful and comforting dish features hard-boiled eggs simmered in a fragrant tomato-based sauce infused with spices like cumin, coriander, turmeric, and garam masala. Perfect for a cozy night in, this dish pairs well with rice, naan, or bread.

Ingredients:

  • 6 hard-boiled eggs
  • 2 tbsp oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 green chili, chopped
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric
  • 1/2 tsp garam masala
  • 1 cup tomato puree
  • 1/2 cup water
  • Salt, to taste
  • Cilantro, chopped for garnish

Instructions:

  1. Heat the oil in a large skillet over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
  2. Add the onion, garlic, ginger, and green chili to the skillet and sauté for 3-4 minutes, or until the onion is translucent.
  3. Add the coriander powder, turmeric, and garam masala to the skillet and cook for another minute, stirring constantly.
  4. Add the tomato puree and water to the skillet and bring the mixture to a boil. Reduce the heat to low and simmer for 10-15 minutes, stirring occasionally, until the sauce has thickened.
  5. Cut the hard-boiled eggs in half and add them to the skillet. Gently stir to coat the eggs in the sauce. Simmer for 5-10 minutes or until the eggs are heated through.
  6. Season with salt to taste and garnish with cilantro. Serve with rice, naan, or bread.
