Flavorful Shrimp Stir-Fry Recipe for a Quick Weeknight Dinner

Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 garlic cloves, minced
  • 1 tablespoon ginger, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon cornstarch
  • Salt and pepper, to taste

Instructions:

  1. In a small bowl, whisk together the soy sauce, honey, cornstarch, salt, and pepper.
  2. Heat the vegetable oil in a large skillet over medium-high heat.
  3. Add the shrimp to the skillet and cook until they turn pink, about 2-3 minutes per side.
  4. Remove the shrimp from the skillet and set aside.
  5. Add the garlic and ginger to the skillet and sauté for 30 seconds.
  6. Add the sliced bell peppers, broccoli, and snap peas to the skillet and sauté for 3-4 minutes or until the vegetables are tender.
  7. Pour the soy sauce mixture over the vegetables and stir to combine.
  8. Add the cooked shrimp back into the skillet and stir until everything is heated through.
