Greek Spanakopita Recipe with a Flaky Filo Crust

Ingredients:
- 1 pound fresh spinach, washed and chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1/2 cup fresh dill, chopped
- 1/2 cup fresh parsley, chopped
- 1/2 cup feta cheese, crumbled
- 4 eggs, lightly beaten
- Salt and pepper to taste
- 1/2 cup olive oil
- 1/2 pound filo pastry sheets
Instructions:
- Preheat the oven to 350°F.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté until softened.
- Add the spinach and cook until wilted.
- Remove from heat and let it cool.
- Add the dill, parsley, feta cheese, eggs, salt, and pepper, and mix well.
- Grease a baking dish with olive oil and lay 5-6 filo sheets on top, brushing each with olive oil.
- Add the spinach mixture to the dish and spread it evenly.
- Cover with 5-6 more filo sheets, brushing each with olive oil.
- Bake for 45-50 minutes, or until golden brown.
