Hearty Lentil Soup Recipe

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1 cup red lentils
  • 4 cups vegetable broth
  • Salt and pepper, to taste
  • Lemon wedges, for serving

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion, garlic, carrot, and celery, and sauté until softened, about 5 minutes.
  2. Add the ground cumin, coriander, and smoked paprika to the pot, and sauté for another 2 minutes until fragrant.
  3. Add the red lentils and vegetable broth to the pot. Bring the mixture to a boil, then reduce heat and let it simmer for 25-30 minutes, until the lentils are tender.
  4. Use an immersion blender or transfer the mixture to a blender and blend until smooth.
