Hindi Chole Bhature Recipe

Ingredients:
For Chole (Chickpea Curry):
- 1 cup chickpeas (chole), soaked overnight
- 2 medium-sized onions, finely chopped
- 2 medium-sized tomatoes, pureed
- 2 green chilies, slit lengthwise
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1/2 teaspoon amchur (dried mango powder)
- 2 tablespoons oil
- Salt to taste
- Fresh coriander leaves for garnishing
For Bhature (Fried Bread):
- 2 cups all-purpose flour
- 1/2 cup yogurt
- 1 teaspoon sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- Oil for frying
Instructions:
For Chole:
- Drain and rinse the soaked chickpeas. Pressure cook them with enough water and a pinch of salt until tender (around 4-5 whistles).
- Heat oil in a deep pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and slit green chilies. Cook for a minute.
- Add tomato puree, coriander powder, turmeric powder, red chili powder, and salt. Cook until the oil separates from the mixture.
- Add cooked chickpeas (chole) along with some water. Mix well and simmer for 10-15 minutes.
- Sprinkle garam masala and amchur powder. Stir well and cook for another 2-3 minutes.
- Garnish with fresh coriander leaves.
For Bhature:
- In a large mixing bowl, combine all-purpose flour, yogurt, sugar, baking powder, and salt.
- Gradually add water and knead the mixture into a soft and smooth dough.
- Cover the dough with a damp cloth and let it rest for at least 1 hour.
- Divide the dough into small balls and roll them into oval or round shapes.
- Heat oil in a deep pan for frying.
- Carefully place the rolled bhature into the hot oil and fry until golden brown and puffed up on both sides.
- Remove the bhature from the oil and drain excess oil on a paper towel.
