Hindi Chole Bhature Recipe

Ingredients:

For Chole (Chickpea Curry):
  • 1 cup chickpeas (chole), soaked overnight
  • 2 medium-sized onions, finely chopped
  • 2 medium-sized tomatoes, pureed
  • 2 green chilies, slit lengthwise
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon amchur (dried mango powder)
  • 2 tablespoons oil
  • Salt to taste
  • Fresh coriander leaves for garnishing
For Bhature (Fried Bread):
  • 2 cups all-purpose flour
  • 1/2 cup yogurt
  • 1 teaspoon sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • Oil for frying

Instructions:

For Chole:
  1. Drain and rinse the soaked chickpeas. Pressure cook them with enough water and a pinch of salt until tender (around 4-5 whistles).
  2. Heat oil in a deep pan over medium heat. Add cumin seeds and let them splutter.
  3. Add chopped onions and sauté until golden brown.
  4. Add ginger-garlic paste and slit green chilies. Cook for a minute.
  5. Add tomato puree, coriander powder, turmeric powder, red chili powder, and salt. Cook until the oil separates from the mixture.
  6. Add cooked chickpeas (chole) along with some water. Mix well and simmer for 10-15 minutes.
  7. Sprinkle garam masala and amchur powder. Stir well and cook for another 2-3 minutes.
  8. Garnish with fresh coriander leaves.
For Bhature:
  1. In a large mixing bowl, combine all-purpose flour, yogurt, sugar, baking powder, and salt.
  2. Gradually add water and knead the mixture into a soft and smooth dough.
  3. Cover the dough with a damp cloth and let it rest for at least 1 hour.
  4. Divide the dough into small balls and roll them into oval or round shapes.
  5. Heat oil in a deep pan for frying.
  6. Carefully place the rolled bhature into the hot oil and fry until golden brown and puffed up on both sides.
  7. Remove the bhature from the oil and drain excess oil on a paper towel.
