Spicy Southwest Skillet

Ingredients:
- 1 lb. ground beef
- 1 onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 tbsp. chili powder
- 1 tsp. cumin
- 1/2 tsp. paprika
- 1/4 tsp. cayenne pepper
- Salt and pepper, to taste
- 1/2 cup shredded cheddar cheese
- Fresh cilantro, for garnish
Instructions:
- Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking up the meat with a wooden spoon as it cooks.
- Add the onion, red and green bell peppers, and sauté until the vegetables are tender, about 5 minutes.
- Add the black beans, corn, chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Stir well to combine.
- Cover the skillet and simmer for 10-15 minutes, stirring occasionally.
- Remove the lid and sprinkle the shredded cheese over the top. Cover the skillet and let it sit for a minute or two until the cheese is melted.
- Garnish with fresh cilantro and serve hot.
