Spicy Southwest Skillet

  • 1 lb. ground beef
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 tbsp. chili powder
  • 1 tsp. cumin
  • 1/2 tsp. paprika
  • 1/4 tsp. cayenne pepper
  • Salt and pepper, to taste
  • 1/2 cup shredded cheddar cheese
  • Fresh cilantro, for garnish


  1. Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking up the meat with a wooden spoon as it cooks.
  2. Add the onion, red and green bell peppers, and sauté until the vegetables are tender, about 5 minutes.
  3. Add the black beans, corn, chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Stir well to combine.
  4. Cover the skillet and simmer for 10-15 minutes, stirring occasionally.
  5. Remove the lid and sprinkle the shredded cheese over the top. Cover the skillet and let it sit for a minute or two until the cheese is melted.
  6. Garnish with fresh cilantro and serve hot.
