Vegan Chickpea Stew Recipe

  • 1 can of chickpeas, drained and rinsed
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 large carrot, peeled and chopped
  • 1 red bell pepper, chopped
  • 1 can of diced tomatoes
  • 2 cups of vegetable broth
  • 1 tsp. of ground cumin
  • 1 tsp. of smoked paprika
  • 1 tsp. of dried thyme
  • 1 tbsp. of olive oil
  • Salt and pepper to taste


  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
  3. Add the carrot and red bell pepper and cook for another 5 minutes, or until the vegetables are tender.
  4. Add the chickpeas, diced tomatoes, vegetable broth, cumin, smoked paprika, and thyme to the pot.
  5. Bring the mixture to a simmer and let it cook for about 20-25 minutes, stirring occasionally, until the stew has thickened.
  6. Season with salt and pepper to taste.
  7. Serve hot with crusty bread or rice.
